I wish to use Halcon but I'm not sure what standards my camera(s) support

Usually the manufacturer will mention what standards they support explicitly either in documentation or if the documentation or marketing material contain the USB3 Vision, GigE Vision or GenICam logo's.

Usually camera manufactures will mention what standards their products conform to, in the below example you can see it supports GenICam and GigE Vision, which is what we want.
